While in Utah it is recommended that you check out the travel agents and find the next flight out
January is Winter in Utah. Known as the greatest snow on earth you have some world class ski resorts such as Snowbird, Alta and Park City. Of course all the Mormon attractions are open all year round like the tabernacle etc. But skiing is the mainstay of the Utah winter. Great power snow and great skiing.
Ski your brains out in some of the best skiing in North America.
In January northern Utah would be cool and still fairly snowy so if you like skiing it would be a great time to come. Southern Utah would be cooler still, but warmer than northern Utah. Here is a link to the average temperatures in Salt Lake City
